our "dörrwein" is a liqueur wine, which is produced in the same way as port wine, only from fruit.
 
in order to increase the must weight, we macerate dried fruits in the mash for this wine. this concentrates the entire aroma spectrum.
 
after the must has fermented for a couple of days, it is fortified with our own apple brandy so the yeast stops fermenting.
 
the residual sugar is thus preserved and the maturing period in the wood barrel can begin.
 
our apple dörrwein was in new barriques for one year before it was bottled in december 2022. with its 16.6% vol.
